The fragrant dashi, made from Rishiri kelp and bonito flakes, enhances the natural flavors of the octopus and premium wagyu beef.

Our vegetarian “Tomato Balls” are made with rich shiitake dashi from Shimane, offering a surprisingly deep, umami-rich flavor.

And yes… we also add a special secret ingredient to enhance the flavor even more—so they’re truly delicious on their own.

White Miso Sauce

White Miso Sauce

Our miso glaze is made with “Suminoe Miso,” a sweet white miso produced by Ikedaya Honpo—an artisan miso maker founded in 1531 near the historic Sumiyoshi Taisha Shrine.

Founded during the late Muromachi period (early Sengoku era), their miso has been loved for nearly 500 years.

With a gentle flavor from rice koji and a hint of sweetness, it pairs perfectly with the delicate umami of our tomato balls.
